This coffee was meticulously harvested with only the ripest red cherries, ensuring optimal sweetness. The drying process began with bean-by-bean placement on the patio to control internal moisture. By the third day, the cherries were layered into pyramids to encourage fermentation, with periodic covering to maintain high temperatures.
After seven days, the coffee was transferred to barrels under shade for further fermentation. The entire process—lasting approximately 10 days—resulted in a precise humidity level of 11.5%. The aerobic fermentation method, combined with Vera Nunes' dedication to quality, produces a cup with unparalleled sweetness, smoothness, and a rich, creamy texture.
