Producer Details:
Producers in La Huaca own small farms ranging from 1 to 3 hectares, cultivating a mix of Castillo, Caturra, and Bourbon varieties. The coffee cherries are hand-picked and processed locally. After harvesting, cherries are de-pulped and fermented for approximately 24 hours, often in bags due to the limited availability of tanks. The beans are then washed and dried on patios, a process that takes about 20 days due to the humid, wet micro-climate.
La Huaca, situated in the Huabal district of Cajamarca, benefits from its deep red, mineral-rich soils and unique climate, contributing to its distinct cup profile.
