As the city wakes, Wilson carefully examines green coffee beans sourced from some of the best coffee-growing regions in the world. These speciality grade beans are the backbone of everything roasted here.

Whether it’s a Brazilian single origin like Brazil, Bargate Roast or the vibrant flavours of Ethiopia, Worka Chelbesa, each batch begins with careful selection. 


 

🔥 9:00 AM — The Roastery Comes Alive

As the 5kg Probat roaster heats up, Wilson adjusts roast profiles to match the unique character of each bean. The goal? Balance acidity with sweetness and body, drawing out rich aromas and deep flavour notes that define Ascapart’s speciality coffee. 

The medium roast profiles Wilson favours make these beans perfect for a range of brewing styles — from classic espresso to filter pour-overs. This precision, skill and experience (including his status as a qualified Q-Grader) ensures every bag delivers exceptional quality. 


 

🔍 10:00 AM — Quality Control Through Cupping

Mid-morning is cupping time — a ritual in the world of speciality coffee roasting. Wilson samples each batch to evaluate aroma, body, sweetness and balance. 🫖 Midday — Syncing with Café Service
