Our Doyo lot comes from the renowned Doyo Cooperative in Ethiopia's Jimma region, where thousands of smallholder farmers cultivate heirloom coffee varieties beneath the shade of native forest. Carefully washed and dried on raised beds, this coffee is a wonderful expression of both its origin and the meticulous work of the producers behind it.
Roasted exclusively for filter brewing, Doyo opens with vibrant grape, followed by juicy date and a delicate black tea finish. The cup is crisp, refined and wonderfully balanced, with a silky body and lingering sweetness that evolves as the coffee cools.
This is the kind of coffee that quietly impresses. It doesn't rely on bold fermentation or intense fruit bombs—instead, it showcases just how elegant washed Ethiopian coffee can be when exceptional farming meets thoughtful roasting.
Freshly roasted in small batches in Southampton by our Head Roaster, Wilson, Doyo is a coffee you'll happily brew again and again.
