“Musaza,” meaning “elder” in Kinyarwanda, was processed at Rwamatamu’s Mbare washing station in Muhanga, Southern Province, Rwanda. The cherries are hand-sorted and dried on raised beds for 26–33 days, then milled in Kigali, where they’re dehusked, polished and graded.
